This Sauvignon Blanc has been barrel fermented and aged in old oak barrels. Barrel ferments promote vigorous fermentation which constantly mixes yeast and wine. This imparts roundness and fatness to the wine, along with layers of complexity that stainless steel ferments do not do. The wine shows typical Sauvignon Blanc characters but with a softness and yeastiness coming from the barrel fermentation.
The wine was pumped out of the barrel and into a tank to let particles settle at the bottom after some time. Wine skips the filtration step, and we let gravity do the work and rack it into a fresh tank before bottling.
