By Josh Scott Natural Sauvignon Blanc was handpicked, hand destemmed and then fermented on its skins, at very cool temperatures. After ferment, the wine, with its skins, was left to age for 3 months. Drained, and lightly basket pressed the wine was left to settle for two weeks in an old wine barrel. Following this, the wine was racked and bottled with no fining and no filtration. There will be sediment in this wine.
