WINEMAKING

This Cavalier is made in a style that references Ruby Port but it is not a copy and it is quite different in their actual make up. Because we have such expressive fruit the alcohol is kept to a moderate level to better reveal aromatic detail. That means we do not fortify the wines with any spirit. The base wines are made as separate batches and blended closer to bottling.

During the winemaking process old barrels are used for their effect on complexity and texture, and combined with the use of cane sugar allows us to create a balance that aims for an indulgent, long structure.
