Ocean-cellared

The very best single-estate Pinot Noir and Chardonnay grapes — selected for their colour and flavour — are pressed, fermented and bottled on land. These few vessels are then transported to a secluded family location to be aged underwater.

Embraced by the cold arms of the Marlborough Sounds, these treasures ferment again. For nine years they sleep on the ocean’s bed, thirteen meters deep. Coral grows and seasons pass. Beneath the vigilant gaze of tui and ancient fern, in a bay near the Scott family bach, the wine matures.

Distinct and exciting, Effervesce is crafted for the curious. It is a highly rare innovation in wine-making created for those with the soul of an explorer. Following Méthode Traditionnelle time-honoured techniques, this wine is a prestigious experience that only a few get to encounter.

Viticulture

Allan Scott Wines had designated a select vineyard to cultivate the grapes for this renowned style of wine, originally pioneered by the French over 500 years ago.

The harvest timing was critically precise and the grapes destined for our sparkling wine were picked first. This earlier harvest ensured the grapes maintained a high natural acidity, crucial for the distinct finesse and unique flavour profile characteristic of our Méthode Traditionnelle wine for the 2011 vintage.

Vinification

Crafted from select Pinot Noir and Chardonnay grapes sourced from Marlborough, the Effervesce grapes underwent a gentle pressing to extract only the finest free-run juice, rich in delicate acids. The base wine was meticulously fermented to dryness, subsequently filtered, and readied for a secondary fermentation directly in the bottle. Just before bottling, a precise measure of sugar and yeast was added to spark the bottle fermentation.

Over the ensuing weeks, the yeast transformed the sugar into carbon dioxide, which, unable to escape, dissolved into the wine, creating exquisitely fine bubbles. These bubbles enhance the mid-palate and seamlessly integrate with the wine’s beautifully balanced acidity.

After maturing for nine years on its lees in the cool, dark depths of the Marlborough Sounds, each bottle was individually disgorged by hand and carefully packaged.
